It's been a while since I have posted a recipe, but I thought this one was worth sharing. Every day this week, our bananas got spottier and less appealing and I knew I'd have to do something with them...
Chocolate Chip Banana Muffins

Preheat the oven to 350. Grease muffin pan. Mix the dry ingredients in a bowl. In a separate bow, mix the egg, oil, and yogurt. Add your mashed bananas and chocolate chips to the wet mixture. Fold the dry mixture into the wet.
Fill muffin cups 2/3 full, which makes appx. 16 muffins. Bake 22 minutes, (less for the smaller batch) until a toothpick comes out clean.

- 1 3/4 C flour
- 3/4 C sugar
- 1 tsp baking powder
- 1tsp baking soda
- 1/2 tsp salt
- 1 egg
- 1/2 C oil
- 1/2 C yogurt (I used vanilla)
- 1 tsp vanilla
- 1 C mashed ripe bananas (I used 3)
- 3/4 C semisweet chocolate chips (I used mini so that every bite has chocolate!)
- I also added 1/2 tsp of cinnamon, which I could definitely taste. Yum.
