Foodie Friday: Ranch Potato Salad

With the holiday weekend upon us, here is a potato salad I actually like to eat. Since I don't eat mustard, pretty much all other potato salads are no-gos for me. Try this one and I guarantee you won't have leftovers. Or if you do, consider yourself lucky because then you can hoard it:o)

Ranch Potato Salad

Ingredients
one 5 lb. bag of red potatoes
one bottle of Ranch dressing (I used Hidden Valley)
one bunch of scallions
one package of bacon
one bag of shredded cheddar cheese

  1. Wash and cut the potatoes into chunks (We like larger chunks, not so much "diced")
  2. Boil the potatoes for about 10 minutes until fork-tender. While they are boiling, wash and slice scallions.
  3. While the potatoes are cooling, prepare your bacon (we like it from the skillet). Crumble into the salad when completely cooled.
  4. Add scallions and pour on the Ranch!  I use about half a bottle, but you might like more.
  5. Mix it up and chill.
